Instructions

  • Preheat the oven to 350°F (175°C).
  • Blanch fresh green beans in boiling water for about 4 minutes until bright green and crisp-tender. Drain and set aside.
  • Sauté diced onions in a large skillet with a tablespoon of oil or butter over medium heat for about 5-7 minutes until translucent and slightly caramelized.
  • Combine the sautéed onions with cream of mushroom soup, milk, and a pinch of salt and pepper in a large mixing bowl.
  • Fold in the blanched green beans gently until nicely coated.
  • Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
  • Top with a generous layer of French fried onions and sprinkle cheese on top if using.
  • Bake in the preheated oven for 25-30 minutes, or until bubbly and golden brown.
