For the Chicken
- 4 pieces Boneless, skinless chicken breasts

- 2 tablespoons Olive oil for drizzling
For the Tzatziki Sauce
- 1 cup Greek yogurt
- 1 medium Cucumber grated
- 2 tablespoons Lemon juice fresh-squeezed
- 1 tablespoon Dried dill
- 2 cloves Garlic minced

How to Make Tzatziki Chicken Rice Bake
Preheat your oven to 375°F (190°C) and lightly grease a baking dish with nonstick spray.
Season the chicken breasts generously with salt and pepper on both sides. Drizzle with olive oil.
Cook the rice in a medium pot according to package instructions and fluff with a fork once cooked.
Mix together the tzatziki sauce by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, salt, and pepper.
Layer the cooked rice evenly in the prepared baking dish. Place the seasoned chicken on top and drench with half of the tzatziki sauce.
Cover the dish with foil and bake for about 30 minutes, then remove the foil and bake for an additional 10 minutes.
Optional: Drizzle the remaining tzatziki sauce on top before serving.
Ensure to shred the cucumber and squeeze out excess moisture for the tzatziki sauce to prevent it from becoming watery. Use a meat thermometer to check that chicken reaches 165°F (74°C).
