Ingredients

For the Sweet Potatoes

  • 4 units Sweet potatoes Baked until tender.

For the Filling

  • 1 lb Lean ground beef Can be substituted with ground turkey or meat alternatives.
  • 8 oz Fresh champignons Cremini or portobello mushrooms can be used.
  • 3 cups Fresh spinach Frozen spinach can be used in a pinch.
  • 1 medium Yellow or white onion
  • 2 cloves Garlic cloves

For the Toppings

  • 1 cup Grated cheese Mozzarella or cheddar recommended.
  • to taste Salt
  • to taste Pepper
  • 1 tsp Paprika
  • 1/4 tsp Nutmeg

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • Wash the sweet potatoes thoroughly and pierce them with a fork. Bake on a tray for 45-60 minutes until tender.
  • Sauté onions and garlic in a skillet over medium heat with a splash of olive oil until fragrant, about 3-5 minutes.
  • Brown the ground beef, then add mushrooms and cook until softened, around 4-5 minutes.
  • Add fresh spinach and cook until wilted. Season with salt, pepper, paprika, and nutmeg before removing from heat.
  • Cut the sweet potatoes in half and scoop out some flesh. Mix with the beef filling and half the cheese.
  • Stuff the sweet potato halves with the mixture, top with remaining cheese, and bake for an additional 10-15 minutes.
  • Let cool for a few minutes before serving warm.

Notes

Optional: Garnish with fresh herbs for added flavor. Always check sweet potatoes with a fork for tenderness before removing them from the oven.
