For the Sweet Potatoes
- 4 units Sweet potatoes Baked until tender.
For the Filling
- 1 lb Lean ground beef Can be substituted with ground turkey or meat alternatives.
- 8 oz Fresh champignons Cremini or portobello mushrooms can be used.
- 3 cups Fresh spinach Frozen spinach can be used in a pinch.
- 1 medium Yellow or white onion
- 2 cloves Garlic cloves
For the Toppings
- 1 cup Grated cheese Mozzarella or cheddar recommended.

- to taste Pepper
- 1 tsp Paprika
- 1/4 tsp Nutmeg
Preparation
Preheat the oven to 400°F (200°C).
Wash the sweet potatoes thoroughly and pierce them with a fork. Bake on a tray for 45-60 minutes until tender.
Sauté onions and garlic in a skillet over medium heat with a splash of olive oil until fragrant, about 3-5 minutes.
Brown the ground beef, then add mushrooms and cook until softened, around 4-5 minutes.
Add fresh spinach and cook until wilted. Season with salt, pepper, paprika, and nutmeg before removing from heat.
Cut the sweet potatoes in half and scoop out some flesh. Mix with the beef filling and half the cheese.
Stuff the sweet potato halves with the mixture, top with remaining cheese, and bake for an additional 10-15 minutes.
Let cool for a few minutes before serving warm.
Optional: Garnish with fresh herbs for added flavor. Always check sweet potatoes with a fork for tenderness before removing them from the oven.
