  • Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
  • In a large skillet over medium-high heat, add olive oil. Once hot, sear the chicken thighs skin-side down for 5-7 minutes until golden brown. Flip and cook for another 3-4 minutes.
  • Deglaze the pan with a splash of apple cider, scraping up any browned bits, then add remaining apple cider, maple syrup, Dijon mustard, and thyme.
  • Return the chicken to the skillet, skin-side up, and bring sauce to a gentle simmer. Cover and reduce heat to low, cooking for 25-30 minutes until chicken is tender.
  • For the slaw, combine cabbage, carrots, and apple in a large bowl. In another bowl, whisk together apple cider vinegar, olive oil, salt, and pepper, then toss over the slaw.
  • Once chicken is done, let it rest for a few minutes before serving it over the slaw, drizzled with the sticky sauce from the skillet.
