Ingredients

  • 4 servings Fresh ramen noodles or instant ramen as an alternative

  • 1 pound Ribeye or sirloin beef thinly sliced; can substitute with flank steak or tofu

  • 2 tablespoons Gochujang Korean chili paste
  • 1 tablespoon Soy sauce
  • 1 tablespoon Sesame oil
  • 1 teaspoon Sugar
  • 1 cup Heavy cream or half-and-half/coconut cream

For the Vegetables

  • 2 cups Bok choy
  • 1 cup Mushrooms sliced

For Garnish

  • 2 stalks Sliced green onions or chives/shallots
  • 1 tablespoon Sesame oil for drizzling

Instructions

Preparation Steps

  • Marinate the Beef: In a bowl, combine 2 tablespoons of gochujang, 1 tablespoon of soy sauce, 1 tablespoon of sesame oil, and 1 teaspoon of sugar. Add the thinly sliced beef and toss to coat. Allow it to marinate for at least 30 minutes for maximum flavor absorption.
  • Cook the Ramen: While the beef marinates, bring a pot of water to a boil. Add the ramen noodles and cook according to the package instructions, usually around 3-5 minutes. Drain and set aside, letting them rest.
  • Grill the Beef: Preheat a grill pan over medium-high heat. Grill the marinated beef slices for about 2-3 minutes on each side, or until they are cooked through and have a nice char. Once done, take the beef off the pan and allow it to rest.
  • Prepare the Creamy Sauce: In the same pan, reduce the heat to medium and pour in 1 cup of heavy cream. Add an additional 1 tablespoon of gochujang and a splash of soy sauce. Stir everything together until the sauce is smooth and slightly thickened, which should take about 5 minutes.
  • Add the Vegetables: Throw in your choice of vegetables, like bok choy and mushrooms, into the creamy sauce. Continue to cook for another 3-4 minutes, or until they are tender and vibrant.
  • Combine Noodles and Meat: Carefully fold the cooked ramen into the sauce, ensuring every noodle is coated in that creamy goodness. Add the grilled beef on top and mix gently to combine all flavors.
  • Serve and Enjoy: Ladle your spicy ramen into bowls, garnishing with sliced green onions and a drizzle of sesame oil. The final presentation will excite your taste buds!

Notes

For an extra crunch, add a sprinkle of sesame seeds as a garnish.
