Instructions

How to Make Spekulatius Mousse with Mascarpone

  • Crush the Spekulatius cookies into fine crumbs using a zip-top bag and a rolling pin.
  • Whip the heavy cream in a large mixing bowl until stiff peaks form.
  • Combine the mascarpone cheese and granulated sugar in another bowl, mixing until smooth.
  • Stir in the vanilla extract into the mascarpone mixture.
  • Fold in the whipped cream gently using a spatula.
  • Incorporate about two-thirds of the crushed Spekulatius cookies into the mousse mixture.
  • Spoon the mixture into individual serving glasses or bowls and layer with remaining cookie crumbs.
  • Cover and refrigerate for at least 2-3 hours.
  • Optional: Top with a sprinkle of cocoa powder before serving.

Notes

For the best flavor, allow the mousse to chill for at least three hours before serving. If using gelatin, bloom it in cold water first before mixing.
