Ingredients

  • 3 tablespoons Olive oil Or avocado oil.
  • 4 cloves Garlic Minced.
  • 1/4 cup Freshly squeezed lemon juice Fresh is best.
  • 2 teaspoons Dried oregano Can substitute with Italian seasoning.

For the Veggies

  • 2 cups Bell peppers Any color.
  • 1 medium Red onion Can substitute with white or yellow onions.

For Finishing Touches

  • 1 cup Crumbled feta cheese Optional.
  • Salt To taste.
  • Pepper To taste.

Instructions

How to Make Slow Cooker Greek Chicken

  • Trim any excess fat from the chicken thighs. Pat them dry and season with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat. Sear chicken thighs skin-side down for 4-5 minutes.
  • Layer sliced bell peppers and onions at the bottom of the slow cooker. Add the chicken on top.
  • Whisk together minced garlic, lemon juice, olive oil, dried oregano, and pour it over the chicken.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender and cooked through.
  • About 30 minutes before serving, sprinkle crumbled feta on top.
  • Serve with rice, couscous, or warm pita bread, garnished with fresh parsley or lemon slices.

Notes

For best results, always pat chicken dry before seasoning and keep the slow cooker lid on while cooking on low.
