For the Chicken
- 4 pieces bone-in, skin-on chicken thighs Can be substituted with boneless, skinless thighs or breasts.
For the Marinade

- 3 cloves garlic Freshly minced.
- 1/4 cup freshly squeezed lemon juice
- 2 teaspoons dried oregano
For the Vegetables
- 2 cups sliced bell peppers Any variety.
- 1 medium red onion Sliced.

Cooking Steps
Trim any excess fat from the chicken thighs, pat them dry with a paper towel, and season generously with salt and pepper.
In a skillet over medium-high heat, add olive oil. Once hot, place the chicken thighs skin-side down and sear for about 4-5 minutes until golden brown.
In your slow cooker, place the sliced bell peppers and onions at the bottom. Then, add the seared chicken thighs on top.
In a small bowl, mix together minced garlic, lemon juice, olive oil, dried oregano, and any additional herbs or spices. Pour this mixture over the chicken.
Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours.
About 30 minutes before serving, sprinkle crumbled feta cheese over the chicken.
Serve the chicken alongside rice, couscous, or warm pita bread.
