Ingredients

For the Beef

  • 3 pounds Chuck roast Can substitute with sirloin or round roast.

For the Vegetables

  • 2 pounds Yukon Gold or red potatoes Or substitute with baby or sweet potatoes.
  • 1 cup Carrots Sliced.
  • 1 medium Onion Diced.

For the Flavor

  • 4-6 cloves Fresh garlic
  • 4 cups Beef broth
  • Salt To taste.
  • Pepper To taste.
  • Thyme or rosemary Fresh or dried.
  • Red pepper flakes Optional.

Instructions

How to Make

  • Cut your chuck roast into 2-inch pieces to ensure even cooking.
  • Sear the beef pieces in a heated skillet over medium-high heat for 2-3 minutes on each side.
  • Layer the ingredients in your slow cooker: seared beef at the bottom, followed by chopped potatoes, sliced carrots, and diced onions.
  • Mince the garlic and sprinkle it over the vegetables and beef. Season with salt, pepper, and herbs.
  • Pour the beef broth over the ingredients, covering the meat and veggies.
  • Set your slow cooker to low for 6-8 hours or on high for 4-5 hours.
  • Taste the broth about 30 minutes before serving and adjust the seasoning if necessary.
  • Serve by ladling the beef and potatoes into bowls, garnishing with fresh parsley.
