Ingredients

Beef

  • 2 lb beef chuck roast a flavorful cut that becomes fork-tender when slow-cooked
  • 1 tbsp Worcestershire sauce optional

Vegetables

  • 2 lb potatoes Yukon Gold or red potatoes
  • 1 ea onion sweet or yellow
  • 2-3 ea carrots optional
  • 1 cup green beans optional
  • 1 cup mushrooms optional

Aromatics

  • 5 cloves garlic fresh
  • 1 tsp thyme
  • 1 tsp rosemary

Broth & Seasoning

  • 2 cups beef broth
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp oil for browning the beef
  • 1 tbsp cornstarch optional, for thickening

Instructions

Preparation

  • Trim the beef chuck roast by removing excess fat and cut it into large chunks, about 2 inches.
  • Sear the beef in a large skillet over medium-high heat. Add a tablespoon of oil and cook until the beef is browned on all sides, about 4-5 minutes.
  • Layer the browned beef in the bottom of the slow cooker. On top, add the chopped potatoes, sliced onions, and minced garlic.
  • Pour in enough beef broth to cover the ingredients halfway.
  • Sprinkle in thyme, rosemary, salt, and pepper, adjusting amounts to your preference.
  • Cover the slow cooker and set it on low for 8 hours or high for 4 hours.
  • Check the beef for fork-tenderness about 30 minutes before serving.
  • Remove the beef and potatoes from the slow cooker and let the beef rest before slicing or shredding.

Notes

Optional: Serve with fresh chopped parsley for a pop of color and flavor.
