For the Filling

  • 8 oz Cream cheese softened
  • 1 cup Shredded mozzarella cheese
  • 1 cup Chopped spinach fresh
  • 2 cloves Minced garlic
  • 1 tsp Italian seasoning
  • to taste Salt
  • to taste Pepper

  • 4 pieces Boneless, skinless chicken breasts

For the Coating

  • 1 cup Breadcrumbs
  • 1/2 cup Grated parmesan cheese

  • 2 tbsp Olive oil

Instructions

How to Make Ruth's Chris Stuffed Chicken

  • Preheat your oven to 375°F (190°C).
  • Butterfly each chicken breast by slicing it horizontally, making sure not to cut all the way through. Pound the chicken to about 1/2 inch thick for even cooking.
  • Combine cream cheese, mozzarella cheese, chopped spinach, minced garlic, Italian seasoning, salt, pepper, breadcrumbs, and parmesan cheese in a large mixing bowl. Mix until everything is well incorporated into a delightful filling.
  • Stuff each chicken breast pocket with a generous portion of the filling. Seal them securely with toothpicks or kitchen twine.
  • Heat olive oil in a sauté pan over medium heat. Cook the stuffed chicken breasts for about 3-4 minutes on each side until they are golden brown.
  • Transfer the browned chicken to a greased baking dish. Drizzle with extra olive oil if desired, and bake for 25-30 minutes or until cooked through to an internal temperature of 165°F (74°C).
