Instructions

How to Make Roasted Carrots With Whipped Ricotta

  • Preheat your oven to 400°F (200°C).
  • Toss the baby or heirloom carrots in a bowl with olive oil, maple syrup, cumin, paprika, salt, and pepper. Spread them evenly on a parchment-lined baking sheet.
  • Roast the carrots for 25–30 minutes, flipping halfway through until tender and caramelized.
  • Combine ricotta, heavy cream, and lemon zest in a food processor or bowl. Whip until smooth and airy.
  • Spread the whipped ricotta on a serving platter, arrange the roasted carrots on top.
  • Drizzle hot honey over the carrots and garnish with fresh herbs, if desired. Serve warm or at room temperature.
