Ingredients

For the Cobbler Base

  • 1 cup Pumpkin puree the star ingredient
  • 1/2 cup Milk can use almond or oat milk
  • 1/4 cup Melted butter or vegetable oil butter adds great flavor
  • 1 tsp Vanilla

For the Topping

  • 1/2 cup Granulated sugar can reduce for less sweetness
  • 1/2 cup Brown sugar dark brown for deeper flavor
  • 1 cup Chopped pecans toast for extra flavor

For Baking

  • 1 cup Hot water creates gooey texture

Instructions

How to Make Pumpkin Pecan Cobbler

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, stir together the flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves until combined.
  • In a smaller bowl, whisk together the pumpkin puree, milk, melted butter, and vanilla. Pour this mixture into the dry ingredients, mixing well to form a thick batter. Transfer it into an 8-inch casserole dish for baking.
  • In a separate bowl, combine the granulated sugar, brown sugar, and chopped pecans. Sprinkle this sweet and crunchy topping evenly over the batter.
  • Carefully pour the very hot water over the entire cobbler dish without stirring.
  • Place the cobbler in the preheated oven and bake for 40 minutes, or until the middle is set and the top has a lovely golden hue.
  • Allow the cobbler to cool for 5-10 minutes before serving.

Notes

Consider adding a sprinkle of cinnamon on top before serving for an extra touch of warmth.
