For the Donuts

  • 2 cups all-purpose flour
  • 1 cup pumpkin puree
  • 1/2 cup coconut sugar
  • 1/4 cup collagen powder
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 2 large eggs
  • 1/2 cup milk or dairy-free alternative

Preparation

  • Preheat your oven to 350°F (175°C). Grease a donut pan with a bit of oil or butter.
  • In a mixing bowl, whisk together the flour, coconut sugar, collagen powder, baking powder, baking soda, cinnamon, and nutmeg.
  • In another bowl, beat the eggs, then mix in the pumpkin puree and milk. Whisk until smooth.
  • Pour the wet mixture into the dry ingredients. Stir gently until just combined.
  • Carefully fill each donut cavity halfway with the batter.
  • Place the donut pan in the preheated oven and bake for 15-18 minutes. Let cool for a few minutes.
