For the Donuts
- 2 cups all-purpose flour
- 1 cup pumpkin puree
- 1/2 cup coconut sugar
- 1/4 cup collagen powder
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 2 large eggs
- 1/2 cup milk or dairy-free alternative
Preparation
Preheat your oven to 350°F (175°C). Grease a donut pan with a bit of oil or butter.
In a mixing bowl, whisk together the flour, coconut sugar, collagen powder, baking powder, baking soda, cinnamon, and nutmeg.
In another bowl, beat the eggs, then mix in the pumpkin puree and milk. Whisk until smooth.
Pour the wet mixture into the dry ingredients. Stir gently until just combined.
