How to Make Pumpkin Cheesecake Truffles
In a mixing bowl, combine the pumpkin puree, cream cheese, powdered sugar, vanilla extract, and pumpkin spice. Mix with an electric mixer until the mixture is smooth and creamy, free of lumps.
Gradually add the graham cracker crumbs into the mixture, gently folding them in until they are evenly distributed throughout.
