Ingredients

How to Make Pumpkin Cheesecake Truffles

  • In a mixing bowl, combine the pumpkin puree, cream cheese, powdered sugar, vanilla extract, and pumpkin spice. Mix with an electric mixer until the mixture is smooth and creamy, free of lumps.
  • Gradually add the graham cracker crumbs into the mixture, gently folding them in until they are evenly distributed throughout.
  • Cover the bowl tightly with plastic wrap and refrigerate for about 1 hour.
  • Using a cookie scoop or a spoon, portion out the mixture and roll each portion into balls about 1 inch in diameter.
  • In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Heat in 20-second intervals, stirring in between until the mixture is smooth and melted.
  • Using a fork, dip each truffle into the melted chocolate, ensuring they are completely coated.
  • Return the coated truffles to the baking sheet and repeat the process for all truffles. Place the baking sheet back in the refrigerator for about 30 minutes, or until the chocolate sets.

Notes
