  • In a skillet over medium heat, add 2 tablespoons of butter. Once melted, toss in 2 sliced onions and a pinch of salt. Cook slowly, stirring occasionally for about 20-25 minutes, until caramelized and golden brown.
  • While the onions are cooking, thinly slice 1 pear and 1 apple. Keep the skins on for added texture and flavor.
  • Lay out 2 slices of sourdough. Spread brie cheese on one slice and shredded cheddar on the other. Pile on the sliced pear and apple, then finish with caramelized onions before topping with the second slice of bread.
  • In the same skillet, add a touch more butter and set the heat to medium-low. Grill the sandwich for about 3-4 minutes on each side, pressing down slightly until the bread is golden brown and the cheese melts.
  • Remove the sandwich from the skillet and let it rest for a minute. Then slice in half and enjoy!
