Filling
- 1 lb beef tenderloin cut into small pieces
- 8 oz fresh mushrooms finely chopped
- 2 tbsp Dijon mustard
- 4 oz prosciutto thinly sliced
Pastry
- 1 sheet puff pastry thawed
- 1 large egg beaten
Seasoning

Preparation

Sear the seasoned beef pieces in a hot skillet for about 2 minutes per side. Remove and let cool.
Sauté the chopped mushrooms in the same skillet until the moisture evaporates, about 5 minutes. Mix in Dijon mustard once cooled.
Roll out the thawed puff pastry and cut it into squares. Layer each square with prosciutto, mushroom mixture, and seared beef.
Fold the corners of the pastry to enclose the filling, then brush with egg wash.
Bake on a parchment-lined baking sheet for 20-25 minutes until golden brown.
