  • resealable bag or shallow dish

Ingredients

For the Marinade

  • 4 pieces Boneless, skinless chicken breasts for that melt-in-your-mouth texture
  • 1/4 cup Olive oil enhances richness and moisture
  • 2 tablespoons Lemon juice or apple cider vinegar adds brightness
  • 3 cloves Garlic minced
  • Herbs of choice (e.g., thyme, rosemary) fresh or dried
  • Salt to taste
  • Pepper to taste
  • Paprika or Italian seasoning optional

For Cooking

  • 2 tablespoons Unsalted butter or plant-based alternative provides a rich, buttery finish
  • 1/2 cup Chicken broth or vegetable broth keeps the chicken tender and juicy

Instructions

How to Make Melt In Your Mouth Chicken

  • In a bowl, whisk together ¼ cup of olive oil, 2 tablespoons of lemon juice (or apple cider vinegar), 3 minced garlic cloves, and your choice of herbs until blended smoothly.
  • Place the chicken breasts in a resealable bag or a shallow dish. Pour the marinade over, ensuring each piece is coated. Seal or cover and marinate in the fridge for at least 30 minutes, up to 2 hours for enhanced flavor.
  • Set your oven to 375°F (190°C) to ensure it’s hot and ready for the chicken!
  • In an oven-safe skillet, melt 2 tablespoons of butter over medium-high heat. Remove chicken from the marinade, letting excess drip off, then sear the breasts for 3-4 minutes on each side until they’re beautifully golden brown.
  • Pour in ½ cup of chicken (or vegetable) broth into the skillet, creating a luscious base for baking.
  • Transfer the skillet to your preheated oven and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
  • Once baked, take the skillet out and let the chicken rest for 5 minutes before slicing to retain its juiciness.

Notes

Serve with a sprinkle of fresh herbs for extra color and flavor.
