  • In a food processor, combine the chopped sun-dried tomatoes, garlic, and fresh herbs. Pulse a few times until they are broken down.
  • With the processor running, gradually pour in the olive oil to create a smooth, creamy texture.
  • Add lemon juice, salt, and pepper to taste. Blend until smooth, allowing the flavors to meld.
  • Taste your dip and adjust seasoning if needed.
  • For the best flavor, let your dip chill in the refrigerator for at least an hour before serving.
