For the Sweet Potatoes
- 4 cups Sweet Potatoes peeled and cubed
- 2 tablespoons Unsalted Butter at room temperature
For the Bacon
- 6 slices Beef Bacon cooked until crispy
For the Glaze
- 1/4 cup Pure Maple Syrup
- 1 teaspoon Cinnamon
- 1/2 teaspoon Nutmeg
Directions
Preheat your oven to 400°F (200°C).
Peel and chop the sweet potatoes into uniform 1-inch cubes.
Cook the beef bacon in a large skillet over medium heat until crispy, about 5-7 minutes. Transfer bacon to paper towel.
Add the sweet potato cubes to the same skillet, toss them in the bacon fat, then drizzle with maple syrup and add butter, cinnamon, and nutmeg.
Spread sweet potatoes in a single layer on a parchment-lined baking sheet. Bake for 25-30 minutes, stirring halfway through.
Crumble the crispy beef bacon over the sweet potatoes in the last 5 minutes of roasting.
Serve warm after removing from the oven.
