Ingredients

For the Chicken Filling

  • 2 cups shredded rotisserie chicken a time-saving, flavorful base for your quesadillas
  • 1/4 cup hot honey adds a sweet and spicy kick
  • 1/2 cup BBQ sauce choose your favorite for smoky depth

For the Quesadilla

  • 2 cups Monterey Jack cheese melts beautifully
  • 4 large flour tortillas soft and pliable

For the Veggies

  • 1 cup bell peppers sliced for a sweet crunch
  • 1 cup onions sliced and sautéed until caramelized
  • 1/2 cup corn optional for texture and sweetness
  • 1 jalapeños optional for extra kick

For Cooking

  • 2 tablespoons olive oil for sautéing and frying

Instructions

Directions

  • In a large bowl, mix the shredded rotisserie chicken with hot honey and BBQ sauce. Stir well until every piece of chicken is evenly coated.
  • Heat a splash of olive oil in a skillet over medium heat. Add the sliced bell peppers and onions, sautéing until tender and caramelized, about 5-7 minutes. Set aside.
  • Take a tortilla and sprinkle half of it with Monterey Jack cheese. Scoop some of the BBQ chicken mixture onto it, then add the sautéed veggies. Top with more cheese before folding.
  • In the same skillet, add another drizzle of olive oil. Place the folded quesadilla in the skillet, cooking until golden brown and crispy, about 3-4 minutes on each side.
  • Continue the process with the remaining tortillas and filling, adding more oil as necessary.
  • Once cooked, remove from the skillet and allow to cool slightly. Slice into wedges and serve with extra BBQ sauce and hot honey for dipping.

Notes

For an even melt of cheese, add it to both sides of the tortilla during assembly. Best served fresh with BBQ sauce and hot honey.
