For the Cheese

  • 200 g Gouda cheese for a creamy, flavorful base that melts beautifully.

For the Vegetables

  • 200 g Cremini or button mushrooms add earthiness and depth to your sandwich.
  • 1 Sweet onion will caramelize beautifully, enhancing the overall flavor.

For the Bread

  • 4 slices Hearty sourdough or whole-grain bread for a robust, toasty backdrop that stands up to the filling.

For the Cooking

  • 2 tbsp Unsalted butter to achieve that perfectly golden and crispy exterior.
  • 1 tsp Salt balances the flavors of the ingredients.
  • 1 tsp Pepper adds a gentle kick to the mix.
  • 1/2 tsp Garlic powder (optional) can enhance the savory notes of this comforting dish.
  • 1 tsp Thyme or rosemary (optional) brings an aromatic touch that elevates the flavor profile.

Instructions

How to Make Gouda Grilled Cheese

  • Preheat your oven to 400°F (200°C).
  • Prepare the mushrooms and onions by cleaning and slicing them. Toss them in a bowl with a drizzle of olive oil, salt, pepper, and your optional herbs. Lay them out evenly on a baking sheet.
  • Roast the vegetables in your preheated oven for about 20 minutes, stirring halfway through, until the mushrooms are golden brown and the onions caramelize beautifully.
  • Butter one side of each slice of bread generously. On the unbuttered side, layer a thick slice of Gouda cheese, top it with the roasted mushrooms and onions, then add another slice of Gouda. Close the sandwich with the buttered side facing up.
  • Grill the sandwich in a medium-hot skillet for about 4-5 minutes on each side. Covering it can help the cheese melt thoroughly while turning the bread a lovely golden brown.
  • Cool the sandwich for a minute after grilling, then slice it in half. Serving it warm allows all that gooey, cheesy goodness to shine through!

Notes

Ensure your ingredients are at room temperature for better melting and flavor. Avoid overcrowding the baking sheet when roasting mushrooms and onions to achieve that perfect caramelization and browning.
