  • 1 cup Heavy cream
  • 1 cup Freshly grated Parmesan cheese Avoid pre-grated for best results.

Steps to Prepare

  • Take the steaks out of the refrigerator about 30 minutes before cooking to allow them to come to room temperature.
  • In a large cast iron skillet, heat the oil over medium-high heat until it shimmers.
  • Add the steak to the hot skillet and sear for about 3-4 minutes on each side for medium-rare.
  • In the final minute, add the butter and minced garlic to the pan and baste the steak.
  • Remove the steak and let it rest on a cutting board for 5-10 minutes.
  • In the same skillet, lower the heat and add heavy cream, bringing it to a gentle simmer; stir in the Parmesan cheese.
  • Slice the steak against the grain and drizzle the Parmesan cream sauce over the slices or serve on the side.
