  • Heat a large, heavy-bottomed skillet over medium-high heat. Add the seasoned potatoes in a single layer and cook undisturbed for 5-7 minutes until golden brown. Flip and continue cooking for another 15-20 minutes until all sides are crispy and tender.
  • Transfer the crispy potatoes to a plate lined with paper towels to drain excess oil. Set them aside while you prepare the steak bites.
  • Pat the steak cubes dry with paper towels and season generously with salt and freshly ground black pepper for a boost of flavor.
  • Wipe out the skillet and return it to high heat. Add another tablespoon of high smoke point oil. Once shimmering, add the seasoned steak bites in a single layer and sear for 1-2 minutes per side until a lovely crust forms.
  • Reduce the heat to medium-low. Add the unsalted butter, minced garlic, fresh rosemary, and fresh thyme to the pan. Spoon the melted garlic butter mixture over the steak bites for 1-2 minutes, soaking in all those wonderful flavors.
  • Remove the skillet from heat. You can either stir the crispy potatoes back into the pan with the steak bites or serve the steak bites immediately over the crispy potatoes for an elegant presentation.
