Ingredients

For the Cake

  • 1 box yellow cake mix
  • 3 large eggs
  • 1/3 cup oil vegetable or canola
  • 1 cup water

For the Eggnog Layer

  • 2 cups non-alcoholic eggnog
  • 1 package instant vanilla pudding mix 3.4 ounce

For the Topping

  • 1 container frozen whipped topping, thawed
  • 1 teaspoon freshly grated nutmeg

Directions

  • Preheat your oven to the temperature specified on your yellow cake mix box. Lightly grease and flour a 9×13 inch baking pan.
  • Mix the yellow cake ingredients in a large bowl according to the package directions, adding the required eggs, oil, and water. Pour the batter into your prepared pan and bake for 28-32 minutes.
  • Cool the cake on a wire rack for about 15-20 minutes, then use the handle of a wooden spoon to poke holes all over the top of the cake, about 1 inch apart, going two-thirds down into the cake.
  • Combine non-alcoholic eggnog and instant vanilla pudding mix in a medium-sized bowl. Whisk for 2-3 minutes until the mixture thickens and is smooth.
  • Pour the thickened eggnog pudding mixture evenly over the warm cake and use a spatula to gently spread.
  • Chill the cake by covering it loosely with plastic wrap and placing it in the refrigerator for at least 4 hours.
  • Spread the thawed whipped topping evenly over the cake's surface and sprinkle freshly grated nutmeg on top.
  • Serve by slicing the cake into generous squares and enjoying immediately with loved ones.

Notes

Ensure cake is completely cool before poking holes for the pudding to seep in.
