  • 2 cups All-purpose flour
  • 3/4 cup Unsweetened cocoa powder High quality recommended.
  • 1 teaspoon Baking soda
  • 1/4 teaspoon Pinch of salt
  • 1 cup Unsalted butter Softened.
  • 3/4 cup Granulated sugar
  • 3/4 cup Brown sugar
  • 1 large Large egg
  • 1 teaspoon Peppermint extract

For the Mix-ins

  • 1 cup Semi-sweet chocolate chips
  • 1/2 cup Crushed peppermint candies

Directions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Whisk together the flour, cocoa powder, baking soda, and salt in a medium bowl.
  • Beat the softened butter, granulated sugar, and brown sugar in a large mixing bowl until light and fluffy.
  • Incorporate the large egg and peppermint extract. Beat until well combined.
  • Gradually add the dry mixture to the wet ingredients. Mix just until combined.
  • Fold in the semi-sweet chocolate chips and crushed peppermint candies gently.
  • Scoop tablespoon-sized balls of dough onto your prepared baking sheet, leaving space between each cookie.
  • Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  • Cool the cookies on the baking sheet for about 5 minutes before transferring them to a wire rack.

Notes
