For the Dough
- 3 cups gluten-free all-purpose flour
- 2 teaspoons active dry yeast
- 1 teaspoon salt
- 1 teaspoon xanthan gum if not included in flour blend
- 1 cup warm dairy-free milk
- 2 teaspoons sugar
- ¼ cup olive oil or melted coconut oil
- 1 teaspoon apple cider vinegar
How to Make Dairy Free Gluten Free Dinner Rolls
In a small bowl, combine 1 cup of warm dairy-free milk with 2 teaspoons of sugar and 2 ¼ teaspoons of active dry yeast. Allow it to sit for 5-10 minutes, until frothy and alive.
In a large mixing bowl, whisk together 3 cups of gluten-free all-purpose flour, 1 teaspoon of salt, and 1 teaspoon of xanthan gum if your flour blend doesn't include it.
In a separate bowl, mix the activated yeast with ¼ cup of olive oil (or melted coconut oil) and 1 teaspoon of apple cider vinegar. Stir well to merge the flavors.
Pour the wet ingredients into the dry mixture. Mix until a soft, sticky dough forms. If it feels too dry, add a bit more dairy-free milk, one tablespoon at a time.
Using wet hands, divide the dough into 12 equal portions and shape them into balls. Place on a parchment-lined baking sheet.
Cover the rolls with a clean kitchen towel and allow them to rise in a warm spot for about 30-45 minutes, or until they’ve doubled in size.
While the rolls are rising, preheat your oven to 375°F.
Once risen, pop the rolls in the oven and bake for 20-25 minutes, or until beautifully golden brown on top.
Let the rolls cool on a wire rack for at least 10 minutes before serving.
