  • measuring spoons

Ingredients

For the Dough

  • 3 cups gluten-free all-purpose flour
  • 2 teaspoons active dry yeast
  • 1 teaspoon salt
  • 1 teaspoon xanthan gum if not included in flour blend
  • 1 cup warm dairy-free milk
  • 2 teaspoons sugar
  • ¼ cup olive oil or melted coconut oil
  • 1 teaspoon apple cider vinegar

Instructions

How to Make Dairy Free Gluten Free Dinner Rolls

  • In a small bowl, combine 1 cup of warm dairy-free milk with 2 teaspoons of sugar and 2 ¼ teaspoons of active dry yeast. Allow it to sit for 5-10 minutes, until frothy and alive.
  • In a large mixing bowl, whisk together 3 cups of gluten-free all-purpose flour, 1 teaspoon of salt, and 1 teaspoon of xanthan gum if your flour blend doesn't include it.
  • In a separate bowl, mix the activated yeast with ¼ cup of olive oil (or melted coconut oil) and 1 teaspoon of apple cider vinegar. Stir well to merge the flavors.
  • Pour the wet ingredients into the dry mixture. Mix until a soft, sticky dough forms. If it feels too dry, add a bit more dairy-free milk, one tablespoon at a time.
  • Using wet hands, divide the dough into 12 equal portions and shape them into balls. Place on a parchment-lined baking sheet.
  • Cover the rolls with a clean kitchen towel and allow them to rise in a warm spot for about 30-45 minutes, or until they’ve doubled in size.
  • While the rolls are rising, preheat your oven to 375°F.
  • Once risen, pop the rolls in the oven and bake for 20-25 minutes, or until beautifully golden brown on top.
  • Let the rolls cool on a wire rack for at least 10 minutes before serving.

Notes

Drizzle your rolls with olive oil before serving for an extra touch of flavor!
