Instructions

How to Make Crock Pot Creamy Chicken Parmesan Soup

  • Chop the onion and mince the garlic, then place the raw chicken in the bottom of your slow cooker. Pour in the chicken broth and crushed tomatoes to create a rich base. Add the chopped onion, minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper. Stir gently to combine.
  • Cover the slow cooker, setting it to cook on LOW for 6-8 hours or on HIGH for 3-4 hours. The chicken should be cooked through and tender—this will add incredible flavor to your soup.
  • Once cooked, carefully remove the chicken from the Crock Pot and shred it using two forks. This makes it easy to mix back into the soup and ensures each bowl is comforting and hearty.
  • Stir in the heavy cream or softened cream cheese along with the grated Parmesan cheese. Mix gently until everything is fully incorporated, creating a velvety texture that envelops the chicken.
  • Prepare your small pasta according to the package directions. After draining, add it to the Crock Pot during the last 15-20 minutes of cooking or just before serving. Stir to combine and heat through, so the pasta is warm and ready to enjoy.
