Ingredients

For the Chicken

  • 2 lbs Boneless, skinless chicken breasts Thighs can be used for more juiciness.

For the Spinach

  • 6 cups Fresh spinach Frozen spinach can be used as an alternative.

For the Creamy Base

  • 8 oz Cream cheese Regular, reduced-fat, or vegan substitute can be used.
  • 2 cups Sharp cheddar cheese Feel free to use your favorite cheese.

Seasonings

  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • to taste Salt
  • to taste Pepper

Optional Add-Ins

  • 1 handful Fresh herbs Like parsley or thyme.
  • 1 cup Diced bell peppers
  • 1 cup Mushrooms
  • 1 cup Cooked ground turkey or beef

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Cook the diced chicken in a skillet over medium heat with a splash of oil until it’s no longer pink, about 6-8 minutes. Season with salt, pepper, garlic powder, and onion powder.
  • Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  • Stir in the cream cheese after removing the skillet from heat.
  • Pour the chicken and spinach mixture into a greased 9x13 inch baking dish, spreading it evenly.
  • Sprinkle generous amounts of shredded cheddar cheese on top of the mixture.
  • Bake in the preheated oven for about 20-25 minutes, or until the cheese is bubbly and slightly golden.
  • Let the casserole cool for a few minutes before serving.

Optional Garnish

  • Garnish with fresh herbs like parsley or thyme.

Notes

Dice the chicken into uniform pieces for even cooking. Avoid overcrowding the skillet while cooking. Always let the casserole rest for a few minutes after baking before serving.
