How to Make Cranberry Orange Chicken
Zest and juice the orange, then mince the garlic. Pat the chicken dry and generously season with salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the chicken for about 4-6 minutes on each side until golden brown. Remove the chicken and set aside.
Add fresh cranberries, orange juice, orange zest, honey or maple syrup, minced garlic, thyme or rosemary, chicken broth or water, balsamic vinegar, and Dijon mustard to the skillet. Bring to a gentle simmer.
Nestle the seared chicken back into the skillet. Reduce the heat to low and let it simmer for 15-20 minutes, until the cranberries burst and the chicken reaches 165°F.
