Ingredients

For the Brownies

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3/4 cup Dutch-process cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs room temperature
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch

For the Ganache

  • 1/2 cup heavy cream heated
  • 1 cup semisweet chocolate chopped

For the Toppings

  • 1 cup rainbow candy-coated chocolate chips
  • a pinch salt

Instructions

How to Make Cosmic Brownies

  • Preheat the oven to 350°F (175°C).
  • Melt the unsalted butter over low heat in a medium saucepan.
  • Once melted and glossy, whisk in the granulated and brown sugars until creamy.
  • Beat in the eggs one at a time, followed by the vanilla extract.
  • In a separate bowl, whisk together cocoa powder, salt, flour, and cornstarch, and then gradually combine with wet ingredients.
  • Pour the batter into a greased 8x8-inch baking pan and smooth the top.
  • Bake for 20-25 minutes until the edges are set and center is slightly soft.
  • Heat the heavy cream until it simmers, then stir in chopped chocolate until smooth.
  • Pour the ganache over cooled brownies and spread it out evenly.
  • Sprinkle rainbow chocolate chips over the ganache and press gently.
  • Chill in the refrigerator for at least 30 minutes.

Notes

For the best texture, use room temperature eggs and avoid overmixing the batter. Chill the brownies after adding ganache for a glossy finish.
