Ingredients

For the Roast

  • 3 pounds Chuck Roast a well-marbled cut

Instructions

Preparation Steps

  • Pat the chuck roast dry with paper towels, then season it generously with salt and pepper on both sides.
  • In a large Dutch oven, heat a tablespoon of oil over medium-high heat. Add the roast and sear for about 4-5 minutes on each side.
  • In the same pot, add another tablespoon of oil if necessary, then toss in sliced onions. Cook over medium heat for about 15-20 minutes.
  • Stir in minced garlic, thyme, and bay leaves, and cook for an additional minute. Pour in the non-alcoholic red wine.
  • Return the seared roast to the pot, then pour in the beef broth. Ensure the liquid mostly covers the roast.
  • Bring to a gentle simmer, cover, and transfer to a preheated oven at 300°F (150°C). Cook for about 3 to 4 hours.
  • Once done, remove from oven and let it rest for about 15 minutes before slicing and serving.
