- 2 tablespoons Granulated sugar
- 1 tablespoon Baking powder
- 1/2 teaspoon Salt
- 1 cup Milk whole or dairy alternative

- 1 teaspoon Vanilla extract

- 1/4 cup Brown sugar
- 2 tablespoons Melted butter
- 1 tablespoon Cinnamon
Cream Cheese Icing
- 4 oz Cream cheese softened
- 1/4 cup Powdered sugar
- 1 tablespoon Milk to adjust consistency
- 1/2 teaspoon Vanilla extract
Preparation
Prepare the Filling: In a small bowl, combine brown sugar, melted butter, and cinnamon until smooth. Transfer to a piping bag for later use.
Mix Dry Ingredients: In a large bowl, whisk together flour, granulated sugar, baking powder, and salt until well combined.
Whisk Wet Ingredients: In another bowl, beat together milk, egg, melted butter, and vanilla extract until smoothly blended.
Combine Ingredients: Pour the wet mixture into the dry ingredients, stirring gently until just combined. Leave a few lumps.
Heat the Skillet: Preheat a non-stick skillet over medium heat and lightly grease it. Pour about 1/4 cup of batter onto the skillet.
Add Cinnamon Swirl: Use your prepared cinnamon filling to create a swirl pattern on top of the batter after pouring it onto the skillet.
Cook the Pancakes: Cook until bubbles appear and edges look set (about 2-3 minutes). Flip and cook another 2-3 minutes until golden brown.
Prepare the Cream Cheese Icing: Mix cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy. Adjust if necessary.
