  • Preheat your oven to 350°F (175°C).
  • Mix together minced garlic, chopped rosemary, olive oil, salt, and pepper in a bowl to create a fragrant marinade.
  • Rub the marinade generously all over the leg of lamb, ensuring every nook is covered.
  • Roast the lamb in a roasting pan for about 1 hour and 30 minutes, or until internal temperature reaches 145°F (63°C).
  • Rest the lamb for about 15 minutes after removing it from the oven.
  • Prepare the gravy by pouring the drippings into a saucepan. Whisk in flour over medium heat until golden brown, then gradually add beef stock until smooth.
  • Slice the lamb and serve topped with the gravy.
