How to Make Christmas Raspberry Mousse
Wash the raspberries under cool water, ensuring they are clean and ready for use. Reserve a handful of raspberries for garnish to create a stunning presentation!
Blend the remaining raspberries in a blender until smooth. Once blended, strain this mixture through a fine mesh sieve to remove any seeds, yielding a silky raspberry puree.
Sprinkle gelatin over 2 tablespoons of cold water in a small bowl. Allow it to bloom for about 5 minutes, which helps it dissolve thoroughly when heated.
Heat half of the raspberry puree in a small saucepan over low heat until it is just warm. Remove it from the heat, then stir in the bloomed gelatin until completely dissolved and incorporated.
Whip the chilled heavy cream with granulated sugar and pure vanilla extract in a separate bowl until soft peaks form. This light and fluffy mixture will make your mousse airy and delightful!
Fold the remaining raspberry puree gently into the whipped cream mixture until just combined, maintaining that lovely light texture.
Combine the warm raspberry-gelatin mixture with the whipped cream, stirring carefully until everything is well blended. Spoon this luscious mixture into serving dishes and chill for at least 2 hours, allowing it to set beautifully.
Garnish your festive mousse with the reserved raspberries and a few mint leaves just before serving, adding a vibrant touch to each dish.
For an extra indulgent twist, drizzle some melted chocolate over the top before serving.
