How to Make Christmas Raspberry Mousse

  • Wash the raspberries under cool water, ensuring they are clean and ready for use. Reserve a handful of raspberries for garnish to create a stunning presentation!
  • Blend the remaining raspberries in a blender until smooth. Once blended, strain this mixture through a fine mesh sieve to remove any seeds, yielding a silky raspberry puree.
  • Sprinkle gelatin over 2 tablespoons of cold water in a small bowl. Allow it to bloom for about 5 minutes, which helps it dissolve thoroughly when heated.
  • Heat half of the raspberry puree in a small saucepan over low heat until it is just warm. Remove it from the heat, then stir in the bloomed gelatin until completely dissolved and incorporated.
  • Whip the chilled heavy cream with granulated sugar and pure vanilla extract in a separate bowl until soft peaks form. This light and fluffy mixture will make your mousse airy and delightful!
  • Fold the remaining raspberry puree gently into the whipped cream mixture until just combined, maintaining that lovely light texture.
  • Combine the warm raspberry-gelatin mixture with the whipped cream, stirring carefully until everything is well blended. Spoon this luscious mixture into serving dishes and chill for at least 2 hours, allowing it to set beautifully.
  • Garnish your festive mousse with the reserved raspberries and a few mint leaves just before serving, adding a vibrant touch to each dish.

Notes
