How to Make Christmas Pinwheel Cookies
In a mixing bowl, cream together 1 cup of softened butter and 1 cup of granulated sugar until the mixture is light and fluffy.
Add 1 large egg and mix until well combined for a delightful texture.
Gradually add 2 cups of all-purpose flour into the mixture. Stir until a soft dough forms.
Divide the dough into two equal portions.
In one half, mix in 1/4 cup of unsweetened cocoa powder, and in the other half, incorporate 2 teaspoons of gel food coloring until well blended.
On a floured surface, roll each colored dough into rectangles about 1/4 inch thick.
Place the cocoa rectangle on top of the colored rectangle. Carefully roll them together tightly into a log shape.
Wrap the log in plastic wrap and refrigerate for about an hour until firm.
Preheat your oven to 350°F (175°C). Once chilled, unwrap the dough, and slice it into rounds about 1/4 inch thick.
Bake for 10-12 minutes until the edges are lightly golden.
Dust with powdered sugar for an extra festive touch if desired.
Ensure your butter is at room temperature for easier creaming with sugar. Use a floured surface and a rolling pin to ensure even thickness. Check at the 10-minute mark to ensure perfect golden edges without over-baking.
