Instructions

How to Make Christmas Pinwheel Cookies

  • In a mixing bowl, cream together 1 cup of softened butter and 1 cup of granulated sugar until the mixture is light and fluffy.
  • Add 1 large egg and mix until well combined for a delightful texture.
  • Gradually add 2 cups of all-purpose flour into the mixture. Stir until a soft dough forms.
  • Divide the dough into two equal portions.
  • In one half, mix in 1/4 cup of unsweetened cocoa powder, and in the other half, incorporate 2 teaspoons of gel food coloring until well blended.
  • On a floured surface, roll each colored dough into rectangles about 1/4 inch thick.
  • Place the cocoa rectangle on top of the colored rectangle. Carefully roll them together tightly into a log shape.
  • Wrap the log in plastic wrap and refrigerate for about an hour until firm.
  • Preheat your oven to 350°F (175°C). Once chilled, unwrap the dough, and slice it into rounds about 1/4 inch thick.
  • Bake for 10-12 minutes until the edges are lightly golden.
  • Dust with powdered sugar for an extra festive touch if desired.

Notes

Ensure your butter is at room temperature for easier creaming with sugar. Use a floured surface and a rolling pin to ensure even thickness. Check at the 10-minute mark to ensure perfect golden edges without over-baking.
