  • 2 teaspoons baking powder

  • 0.5 teaspoon salt
  • 2 large eggs (room temperature)
  • 0.75 cup vegetable oil or applesauce
  • 2 cups grated carrots (fresh)

For the Cream Cheese Glaze

  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar (sifted)
  • 1 teaspoon vanilla extract

Instructions

How to Make Christmas Carrot Cake Loaf

  • Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  • In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, light brown sugar, baking powder, ground cinnamon, ground nutmeg, and salt.
  • In another bowl, beat the room temperature eggs with oil until smooth. Stir in the freshly grated carrots.
  • Gently fold the wet ingredients into the dry ingredients until just mixed.
  • Carefully pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  • Allow the loaf to cool in the pan for ten minutes, then transfer to a wire rack. For the glaze, mix cream cheese, powdered sugar, and vanilla extract until smooth, then drizzle over the cooled loaf.
