For the Chicken
- 4 pieces bone-in, skin-on chicken thighs
- 4 cloves fresh garlic, minced
- 2 tablespoons olive oil

- 2 cups low-sodium chicken broth
- 1 cup heavy cream plus additional for mashed potatoes

Cooking Instructions
Season the chicken thighs on both sides with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken skin-side down and sear for about 5-7 minutes until golden brown. Flip and cook for an additional 5 minutes. Remove the chicken and set aside.
Sauté minced garlic in the same skillet for about 30 seconds until fragrant.

Mash the drained potatoes with butter, heavy cream, and shredded cheddar cheese until smooth and creamy. Season with salt and pepper to taste.
