Steps

  • Preheat your oven to 375°F (190°C) and prepare the French bread by slicing it in half lengthwise and hollowing out some of the interior.
  • In a skillet, heat olive oil over medium-high heat and brown the beef andouille sausage for about 5-7 minutes. Set aside.
  • Lower the heat and sauté onion, green bell pepper, and celery for 5-7 minutes until softened.
  • Stir in minced garlic and Cajun seasoning, cooking for another minute.
  • Add chicken or beef broth, canned tomatoes, and Worcestershire sauce. Let everything simmer for 5 minutes.
  • Return the cooked sausage to the skillet, mix well, and taste for seasoning adjustments.
  • Spoon the filling into each hollowed-out bread half, mounding slightly.
  • Sprinkle a generous amount of shredded cheese on top of each stuffed bread boat.
  • Bake in the oven for 15-20 minutes until the bread is toasted and cheese is melted.
  • Garnish with parsley and green onions before serving.

Notes

Hollow out the bread carefully to maintain a sturdy shell and prevent sogginess. Brown the sausage well for depth of flavor.
