Ingredients

Filling

  • 2 cups Fresh cranberries
  • 1 cup Granulated sugar

Base

  • 1 cup Unsalted butter softened
  • 2 large Eggs
  • 2 cups All-purpose flour

Streusel Topping

  • 1 cup Brown sugar
  • 1 teaspoon Cinnamon
  • 1 cup Cold butter
  • 1 cup All-purpose flour

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • In a bowl, combine the fresh cranberries with 1 cup of granulated sugar; set aside.
  • In a mixing bowl, cream together the softened butter and remaining sugar until fluffy. Add eggs one at a time, then gently mix in the flour until just combined.
  • For the streusel, mix flour, brown sugar, cinnamon, and cold butter together until crumbly.
  • Spread half of the base mixture into the prepared dish, layer with the cranberry filling, and then top with the streusel.
  • Place in the oven and bake for 40-45 minutes or until golden brown. Allow to cool before cutting into bars.

Notes

Dust with powdered sugar for a sweet finishing touch. Make sure the butter for the streusel is cold for the perfect texture.
