Instructions

How to Make Boursin Chicken

  • Prepare the chicken. Slice the chicken breasts horizontally or pound them to ½-inch thickness, or simply leave the thighs whole if you prefer. Pat them dry and season generously with salt and pepper.
  • Heat the skillet. Warm a skillet over medium-high heat and add one tablespoon of olive oil along with one tablespoon of butter. Sear the chicken for 3-5 minutes on each side until it achieves a golden brown color and the internal temperature reaches 165°F (74°C). Once done, remove the chicken from the pan and keep it warm.
  • Sauté the garlic. Lower the heat to medium. If the pan looks dry, feel free to add a splash more olive oil or butter. Sauté the minced garlic for 30 seconds to 1 minute, just until it becomes fragrant and golden.
  • Deglaze the pan. Pour in half a cup of low-sodium chicken broth, scraping the bottom of the pan to lift those scrumptious browned bits that pack a ton of flavor.
  • Make the sauce. Reduce the heat to low. Add one cup of heavy cream and gently bring it to a simmer. Introduce the eight ounces of Boursin cheese, stirring until it melts into a rich and smooth sauce—this usually takes about 2-3 minutes. Taste and adjust seasoning with salt and pepper as desired.
  • Coat the chicken. Return the seared chicken to the pan and gently stir it in the sauce, allowing it to simmer for another 2-3 minutes to warm everything through, enveloping the chicken in that decadent sauce.
  • Garnish and serve. Remove the pan from the heat and garnish your dish with fresh parsley or chives for a pop of color and flavor. Serve the Boursin Chicken hot and watch your loved ones revel in delight!

Notes

For the perfect Boursin Chicken, ensure your chicken is sliced to an even thickness to promote consistent cooking. Always pat your chicken dry before seasoning to help achieve a great sear. When sautéing garlic, keep a close eye on it as it can burn quickly and turn bitter. Lastly, be sure to monitor the temperature of your cream sauce; it should be gently simmered to prevent curdling.
