How to Make Beef Stroganoff Tortellini
In a large skillet, warm 2 tablespoons of olive oil over medium-high heat.
Add 1 pound of ground beef to the skillet, cooking until it’s nicely browned, about 5-7 minutes.
Toss in 1 medium chopped yellow onion and 2 minced garlic cloves; sauté until translucent, about 3-4 minutes.
Stir in 1 tablespoon of Dijon mustard and 1 tablespoon of Worcestershire sauce and cook for about a minute.
Pour in 2 cups of beef broth and bring the mixture to a gentle simmer.
Add 1 package of refrigerated cheese tortellini and cook until tender, about 3-4 minutes.
Stir in 1 cup of sour cream until fully incorporated; season with salt and black pepper to taste.
Sprinkle with 2 tablespoons of chopped parsley right before serving.
