For the Sweet Potatoes
- 4 medium Sweet potatoes These are the star of the show.
- 2 tablespoons Coconut oil Adds richness.
For the Filling
- 2 cups Tart apples Granny Smith is recommended.
- 1 cup Sweet onion Caramelizes beautifully.
- 1 teaspoon Cinnamon Enhances flavor.
- 1/4 teaspoon Nutmeg Adds warmth.
- 1/2 teaspoon Salt Brings out sweetness.
- 1/2 cup Chopped pecans Adds crunch.
- 2 tablespoons Maple syrup Brings sweetness.
Preparation
Preheat your oven to 400°F (200°C).
Wash the sweet potatoes thoroughly and pierce them several times with a fork. Place them on a baking sheet lined with parchment paper and brush with coconut oil. Bake for 45-60 minutes, or until tender.
Sauté chopped onions in a skillet over medium heat with a tablespoon of coconut oil until soft and translucent, about 5 minutes.
Add diced apples, cinnamon, nutmeg, and a pinch of salt. Cook until the apples soften, about 5-7 minutes.
Mix in chopped pecans and maple syrup into the apple mixture. Cook for an additional 2-3 minutes, then remove from heat.
Remove the sweet potatoes from the oven and let cool for a few minutes. Slice them open lengthwise and fluff the insides.
Spoon the apple-nut mixture generously into each sweet potato.
Return the stuffed sweet potatoes to the oven for an additional 10-15 minutes.
Serve warm, optionally drizzled with extra maple syrup.
Ensure to pierce the sweet potatoes well before baking to allow steam to escape. Finely dice the apples to enhance the texture of the filling.
