How to Make Apple Cider Cookies

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy. Add in the egg, apple cider, and vanilla extract, mixing well for a smooth batter.
  • In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Gradually mix the dry ingredients into the wet mixture, stirring until just combined. Fold in the diced apples gently.
  • Drop spoonfuls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden brown.
  • Allow the cookies to cool on the baking sheet for 5 minutes. Then, carefully transfer them to a cooling rack to cool completely.
  • For the glaze, mix the powdered sugar with 1-2 tablespoons of apple cider until smooth. Drizzle this sweet glaze over the cooled cookies.

Notes
